Crunchy Malteser and Banana Cake


Preparation 10 mins Cooking 40 mins Serves 12

Ingredients:

  • 125g butter

  •  ¾ cup castor sugar

  •  2 eggs, lightly beaten

  •  2 tblspn milk

  •  ½ tspn bicarb soda

  •  1 ½ cups S.R. flour

  •  2 ripe bananas, mashed

  •  1 tspn Vanilla essence

  •  250G (1 cup) Maltesers®

Cooking Instructions:

  1. Cream butter & sugar until light & fluffy.

  2.  Gradually add eggs on a low speed.

  3.  Blend bicarb with milk.

  4.  Fold through cream mixture alternately with dry ingredients.

  5.  Stir through mashed bananas, essence and Maltesers.

  6.  Pour into a lightly greased oven proof ring tin.

  7.  Bake in a moderate oven 180deg for 30-40 minutes or until cooked through.
