Zucchini Fritters with Yoghurt Sauce

  • 500g zucchini, grated
  • MasterFoods® Sea Salt, to taste
  • 6-8 spring onions, chopped
  • 150g crumbled fetta cheese
  • ¼ cup freshly chopped mint
  • ½ cup freshly chopped parsley
  • 2 eggs, lightly beaten
  • ¾ cup plain flour
  • ¾ teaspoon baking powder
  • MasterFoods Pepper Black Cracked, to taste
  • 1/3 cup extra olive oil
  • 1 qty yoghurt sauce


Yoghurt & Sundried Tomato Sauce

  • 1 cup greek style yoghurt
  • 1 clove garlic, crushed
  • 2 tablespoons semi dried tomatoes, thinly sliced
  • 1 tablespoon thinly sliced basil
  • 2 tablespoons lemon juice

Cooking Instructions:

  1. Place zucchini in a colander, sprinkle with MasterFoods Sea Salt, allow to stand for 10 minutes.
  2. Squeeze out excess liquid from zucchini and pat dry with paper towels
  3. Combine prepared zucchini, spring onion, fetta, herbs and eggs in a bowl and stir lightly to combine.
  4. Stir in the flour and baking powder, season with MasterFoods Pepper Black Cracked.
  5. Heat the oil in a non stick frying pan over a medium heat.
  6. Place tablespoons of batter into hot oil, flatten lightly with back of spoon.
  7. Cook on each side for 2-3 minutes or until golden brown.
  8. Drain on paper towels and serve with yoghurt sauce.

  1. Combine all ingredients, mix well until well combined.
