Smoked Cajun Chicken and Snake Bean Salad

  • 2 cups cous cous
  • 500ml chicken stock, hot
  • 500g smoked chicken breasts, thinly sliced
  • 200g seedless red grapes
  • 1 bunch snake beans, trimmed and blanched
  • ½ cup cashews, roasted
  • 1 punnet cherry tomatoes
  • 150g rocket leaves
  • ½ cup lime juice
  • ½ cup olive oil
  • 1 tablespoon palm sugar
  • 1 tablespoon MasterFoods® Cajun Seasoning
  • 3 teaspoons MasterFoods Pepper Black Cracked

Cooking Instructions:

  1. Combine cous cous and chicken stock and allow to stand until soft.
  2. Combine rice, grapes, beans, cashews, tomatoes and rocket leaves.  Mix well arrange with smoked chicken.  Toss with prepared cous cous
  3. Prepare dressing combine with remaining ingredients, mix well.  Drizzle over salad, toss lightly.
