Herbed Garlic Fetta Eggplant Rolls

Preparation 20 mins Cooking 10 mins Serves 4-6


  • 2 eggplants
  • 2 tablespoons MasterFoods® Herb & Garlic Seasoning
  • Extra Virgin Olive Oil
  • ½ cup thinly sliced basil leaves
  • 120g fetta cheese, crumbled

Cooking Instructions:

  1. slice eggplants lengthwise into thin slices sprinkled with MasterFoods Herb & Garlic Seasoning
  2. Pan fry in olive oil until golden brown on both sides.  Drain and allow to cool
  3. Lay eggplant slices out flat
  4. Place crumbled fetta and chopped, roll up
  5. Garnish with extra basil
