Fisherman's Stew

  • 2 tablespoons extra virgin olive oil

  •  2 Spanish onions, peeled and chopped

  •  3 teaspoons MasterFoods® Freshly Crushed Garlic

  •  1 teaspoon MasterFoods Ground Turmeric

  •  1 teaspoon MasterFoods Thyme

  •  2 large potatoes, peeled and chopped

  •  3 cups fish stock (750ml)

  •  500g white fish fillets

  •  500g mussels, cleaned and beards removed

  •  500g raw medium green prawns, peeled and de-veined and tails intact

  •  1 red capsicum, seeded and chopped

  •  1 green capsicum, seeded and chopped

  •  Parmesan cheese, freshly grated

Cooking Instructions:

  1. Heat the oil in a large pan, add onions, garlic and tumeric, sauté for 3 minutes.  Add chopped potato and MasterFoods Thyme. Add stock

  2.  Cover and cook for 15 minutes or until potato has softened

  3.  Stir through capsicum

  4.  Add fish and cook for 2-3 minutes.

  5.  Bring to just below boiling point the add mussels and prawns

  6.  Simmer for a further 4 minutes or until all seafood is cooked

  7.  Serve with crusty bread and parmesan cheese
