Easy Thai Pumpkin Soup

Preparation 15 mins Cooking 30 mins Serves 4


  • 1kg butternut pumpkin, peeled, seeded and diced
  • 2 Spanish onions, peeled and chopped
  • 2 teaspoons MasterFoods® Freshly Crushed Garlic
  • 1 teaspoon MasterFoods Chilli Powder
  • 2 tablespoons MasterFoods Thai Seasoning
  • 2 litres MasterFoods Chicken Stock, diluted
  • 2 tablespoons coriander, chopped
  • 3 tablespoons roasted cashews, chopped
  • 2 tablespoons desiccated coconut
  • Sour cream to serve

Cooking Instructions:

  1. Combine pumpkin, onion, garlic, chilli and Thai seasoning into large soup pot.  Cover with stock, bring to the boil, then reduce to simmer
  2. Simmer for 15-20 minutes or until vegetables have softened. Then remove and blend or process until smooth.
  3. Combine coriander, nuts and coconut and mix well
  4. Spoon combined ingredients on top of soup with small spoon of sour cream.  Serve with some hot crusty bread
