Tangy Pumpkin and Rocket Salad

Preparation time - 10 minutes
Cooking time - 30 minutes
Serves - 8

Ingredients

Pumpkin, thinly cut 700g Olive Oil 1 1/2 tablespoons Rocket 200g Slivered Almonds, lightly toasted 56g Semi-Sundried Tomatoes 260g MasterFoods Whole Egg Mayonnaise 6 tablespoons MasterFoods Fresh Garlic, finely crushed 2 teaspoons MasterFoods Sea Salt to taste MasterFoods Cracked Pepper to tast

Method

  1. Thinly cut pumpkin and place on oven tray. Drizzle with olive oil and season with MasterFoods salt and pepper.
  2. Cook pumpkin in hot oven for 20 – 30 minutes. Set aside.
  3. Lightly toast almonds in a dry pan until slightly brown. Set aside.
  4. In a bowl mix the rocket, toasted slivered almonds and semi-sundried tomatoes.
  5. Add in roasted pumpkin.
  6. In a separate bowl combine the MasterFoods Whole Egg Mayonnaise, MasterFoods Fresh Garlic, finely crushed and a dash of olive oil. Whisk until well mixed.
  7. Pour the garlic mayonnaise over the warm salad and serve immediately
