Portugese Paella

Ingredients

Olive Oil ¼ cup diced chicken breast 400g green prawns 300g sliced Chorizo sausage 300g Arborio Risotto rice 3.5 cups chicken stock 8 1/2 cups diced tomato 800g med diced red onion 1 cup med diced celery 1 cup med diced red capsicum 1 cup fresh garlic (mashed & chopped) 3 cloves stuffed Spanish olives 3/4 cup MASTERFOODS Portuguese Chicken Seasoning 4 Tablespoons

Method

  1. Season diced chicken and the prawns with MasterFoods Portuguese chicken seasoning. Hold prawns til end of recipe. Pre-heat oven to 180°c.
  2. Heat oil in a paella pan, add onion, celery and chorizo sausage. Cook for 3 minutes.
  3. Add chicken, capsicum, olives, garlic and cook for 2 minutes.
  4. Add rice to pan, allowing rice to become coated in oil, stir in diced tomato and stock and bring to a boil.
  5. Stir thoroughly, cover and place in oven for 10 minutes.
  6. Add prawns and stir thoroughly, cook for 15 minutes.
  7. When cooking is complete, garnish and serve.
