Pears with Chilli Chocolate Sauce

Preparation time - 10 minutes
Cooking time - 1½ hours
Serves - 8

Ingredients

Pears (slightly under ripe) 8 Sugar 1 cup Water enough to cover pears Sweet sherry 1 cup Orange liqueur ¼ cup Brandy ¼ cup MASTERFOODS Cinnamon Quills 4 Peel of one orange cut into strips 1 Chocolate, roughly chopped 400g Water ½ cup MASTERFOODS Freshly Chopped Chilli ¼ teaspoon Pear liquid or rum (optional) 1-2 teaspoons

Method

  1. Peel pears, leaving stalks on.
  2. Combine sugar, water to cover pears, sherry, orange peel and MASTERFOODS Cinnamon Quills in large saucepan. When sugar dissolves, add pears.
  3. Cover and cook over gentle heat until tender. This usually takes about 1½ hours (the longer the pears are left to simmer, the nicer they are)
  4. Turn pears frequently while simmering. When tender (glazed and transparent in appearance) remove pears and leave to cool
  5. Keep chilled. The pears should keep for one week
  6. When serving add brandy and liqueur to pear liquid then coat with chocolate sauce

To make Chocolate Sauce:

  1. Place Chocolate in saucepan with water and MASTERFOODS Freshly Chopped Chilli.
  2. Stir over low heat until chocolate has melted and sauce is smooth.
  3. Remove from heat and add pear liquid or Rum.
  4. Leave to cool.
  5. Pour over pears.
