Greek Lamb Cutlets with Haloumi Cheese & Tzatziki

Preparation time - 10 minutes
Cooking time - 4-6 minutes
Serves - 10-12

Ingredients

Lamb cutlets, trimmed 30 Extra Virgin Olive oil ¼ cup MASTERFOODS Greek Seasoning ½ cup Haloumi Cheese, sliced to 1cm thickness 400g packet Greek style yoghurt 500ml thick Lebanese cucumber, grated or finely diced 2 Freshly chopped mint 2 tablespoons Freshly squeezed lime juice 1 Roma tomatoes quartered and chargrilled 12 Freshly ground MASTERFOODS Black Pepper & Salt, to taste

Method

  1. Place lamb cutlets and slices of haloumi in a flat dish, brush lightly with olive oil, and season lamb cutlets with MASTERFOODS Greek Seasoning.
  2. To make the Tzatziki, combine yoghurt, cucumber, mint, lime juice and sprinkle some MASTERFOODS Greek Seasoning in a small mixing bowl, mix well.
  3. Place prepared lamb and haloumi onto a hot grill plate or fry-pan, cook until meat is done to the desired tenderness and haloumi is brown on both sides, remove and stand for several minutes.
  4. Serve with prepared Tzatziki on bed of roma tomatoes topped with MASTERFOODS Ground Black Pepper & Salt and lime juice. Add some bread croutons for additional texture.

Tip: Lamb Cutlets & Haloumi can be served with fresh rocket leaves and a squeeze of lemon juice instead of the Tzatziki.
