Tuscan Grilled Lamb with Mustard Yoghurt

Preparation time - 10 minutes
Cooking time - 12 minutes
Serves - 8

Ingredients

Trimmed or 32 lamb cutlets, trimmed 16 lamb fillets Extra Virgin Olive oil 2 tablespoons MASTERFOODS Cracked Black Pepper MASTERFOODS Tuscan Seasoning ¼ cup MASTERFOODS Seeded Mustard 1 tablespoon MASTERFOODS Minced Garlic 2 tablespoons Thick Greek style yoghurt 2 cups Lebanese cucumbers, seeded and grated 4 Freshly chopped parsley 2 tablespoons Sliced roasted kumara 4 Rocket 500g

Method

  1. Remove silver skin from fillets.
  2. Place lamb fillets in a flat dish, brush lightly with olive oil and season with MASTERFOODS Tuscan Seasoning.
  3. Combine MASTERFOODS Seeded Mustard, MASTERFOODS Garlic, yoghurt, cucumber and parsley in a small mixing bowl. Mix well.
  4. Place prepared lamb onto hot grill plate, cook until done to the desired tenderness, remove and stand for several minutes.
  5. Slice and serve with prepared yoghurt mix to the side.

Tip: Serve on a bed of sliced roasted kumera and rocket then sprinkle with Black Cracked Pepper.
