Masterfoods Uncle Ben's Kan Tong DOLMIO

Fisherman’s Stew

Preparation time - 30 minutes
Cooking time - 30 minutes
Serves - 12

Ingredients

Extra virgin olive oil ¼ cup Spanish onions, peeled and chopped 4 MASTERFOODS Freshly Chopped Garlic 2 tablespoons MASTERFOODS Turmeric 2 tablespoons MASTERFOODS Ground Thyme 1 tablespoon Large potatoes, peeled and chopped 4 Fish stock 1½ litres White fish fillets 1kg Mussels, cleaned and beards removed 1kg Raw medium green prawns, peeled and de-veined and tails intact 1kg Red capsicums, seeded and chopped 2 Green capsicums, seeded and chopped 2 Parmesan cheese, freshly grated

Method

  1. Heat the oil in a large pan; add onions, MASTERFOODS Freshly Chopped Garlic and MASTERFOODS Turmeric, sauté for 3 minutes. Add chopped potato and MASTERFOODS Ground Thyme. Add stock.
  2. Cover and cook for 15 minutes or until potato has softened.
  3. Stir through capsicum.
  4. Add fish and cook for 2-3 minutes.
  5. Bring to just below boiling point then add mussels and prawns.
  6. Simmer for a further 4 minutes or until all seafood is cooked.

Tip: Serve with crusty bread and parmesan cheese.
