Mediterranean Salmon Salad

Salmon cutlets or steads

MASTERFOODS Soy Sauce

Freshly squeezed lime juice

Rice Wine vinegar

Eggplants cooked and sliced

Capsicums chargrilled and peeled

White radish, peeled and grated

MASTERFOODS ground black pepper
Method
- Place salmon on a flat dish, brush lightly with olive oil, and season with MASTERFOODS Mediterranean Rub.
- To make the salad dressing, blend MASTERFOODS Freshly Chopped Ginger, MASTERFOODS Sweet Thai Chill Sauce, MASTERFOODS Soy Sauce, mirin, lime juice, a tablespoon of olive oil, and rice wine vinegar and whisk in a small mixing bowl.
- Place prepared salmon kebabs onto a hot grill plate or fry-pan, cook until meat is done to the desired tenderness, remove and stand for several minutes.
- Serve a top of salad consisting of eggplant slices, rocket, chargrilled capsicum, avocado and white radish. Season with MASTERFOODS ground Black Pepper.
