Mediterranean Salmon Salad

Preparation time - 10 minutes
Cooking time - 4-6 minutes
Serves - 8

Ingredients

Salmon cutlets or steads 4 Olive oil 3 tablespoons MASTERFOODS Mediterranean Rub ½ cup MASTERFOODS Sweet Thai Chill Sauce 1/3 cup MASTERFOODS Freshly Chopped Ginger ¼ cup MASTERFOODS Soy Sauce ¼ cup Freshly squeezed lime juice 2 tablespoons Mirin 2 tablespoons Rice Wine vinegar 2 tablespoons Eggplants cooked and sliced 2 large Rocket 4 cups Capsicums chargrilled and peeled 2 Avocados 2 White radish, peeled and grated 1 Fresh mint 3 tablespoons MASTERFOODS ground black pepper

Method

  1. Place salmon on a flat dish, brush lightly with olive oil, and season with MASTERFOODS Mediterranean Rub.
  2. To make the salad dressing, blend MASTERFOODS Freshly Chopped Ginger, MASTERFOODS Sweet Thai Chill Sauce, MASTERFOODS Soy Sauce, mirin, lime juice, a tablespoon of olive oil, and rice wine vinegar and whisk in a small mixing bowl.
  3. Place prepared salmon kebabs onto a hot grill plate or fry-pan, cook until meat is done to the desired tenderness, remove and stand for several minutes.
  4. Serve a top of salad consisting of eggplant slices, rocket, chargrilled capsicum, avocado and white radish. Season with MASTERFOODS ground Black Pepper.

Tip: Sprinkle mint around plate after topping with salad dressing.
