Eggplant Salad to accompany marinated lamb

Serves - 6

Ingredients

Eggplants, diced 2cm cubes 2 large Extra virgin oil 2 tablespoons MASTERFOODS Freshly Chopped Garlic 1 tablespoon Roma tomatoes, diced 6 Continental parsley ¼ cup Chopped coriander 2 tablespoons MASTERFOODS Ground Paprika 2 tablespoons MASTERFOODS Freshly Chopped Chilli 2 teaspoons MASTERFOODS Ground Cumin 1 teaspoon MASTERFOODS Sea Salt, to taste MASTERFOODS Balsamic Vinaigrette 1 tablespoon Lemon juice 2 tablespoons MASTERFOODS Whole Peppercorns grinded

Method

  1. Heat a medium pan over a high heat. Add the olive oil, sauté eggplant and MASTERFOODS Freshly Chopped Garlic until slightly golden and softened.
  2. Add tomatoes bring to the boil, reduce to a simmer.
  3. Add parsley, coriander, MASTERFOODS Ground Paprika, MASTERFOODS Freshly Chopped Chilli, MASTERFOODS Ground Cumin, lemon juice and season with MASTERFOODS Sea Salt and Pepper.
  4. Cook for 10 minutes, until slightly thickened.

Tip: Dress with Lemon juice and MASTERFOODS Balsamic Vinaigrette.
