Marinated Lamb & Eggplant Salad

Preparation time - 20 minutes
Cooking time - 15 minutes
Serves - 6

Ingredients

MASTERFOODS Ground Paprika 3 tablespoons MASTERFOODS Ground Cumin 1½ teaspoons MASTERFOODS Freshly Chopped Garlic 3 tablespoons Extra virgin olive oil 2 tablespoons Lamb back straps 6 x 250g MASTERFOODS freshly ground black pepper and salt Eggplant salad 1 Greek Style Yogurt 450ml Pappadams 12

Method

  1. Combine the MASTERFOODS Ground Paprika, MASTERFOODS Ground Cumin, MASTERFOODS Freshly Chopped Garlic and olive oil in a bowl. Place lamb in bowl, cover and coat with marinade.
  2. Refrigerate for several hours or overnight.
  3. Preheat frying pan or char grill plate.
  4. Season the lamb with salt and pepper. Sear lamb for 4 minutes. Remove and stand on a plate, cover with foil.
  5. Slice lamb on an angle in 20cm slices.

Tip: Serve on a bed of Eggplant Salad Pappadams and side of Greek Style Yogurt.
