Italian Lamb and Fig Salad

Ingredients
Lamb fillets (1.5kg)

MASTERFOODS Mediterranean Rub
½ cup
Olive oil for drizzling over meat
3 tablespoons
Asparagus, trimmed
4 bunches
Bocconcini, drained
500g
Walnuts, lightly toasted

Rocket leaves

Fresh figs

Extra virgin olive oil for drizzling over salad

Method
- Combine lamb and MASTERFOODS Mediterranean Rub in a medium bowl and coat until lamb is covered. Drizzle with olive oil.
- Heat BBQ plate or char grill. Sear lamb until tender. Remove, cover and let stand for several minutes.
- Place asparagus on grill. Char grill for 3-4 minutes until tender. Remove and slice on an angle 4cm long.
- Slice lamb into pieces (on an angle) about 2.5cm thick.
- Combine lamb, asparagus, bocconcini and nuts with the rocket. Toss lightly.
- Arrange salad with fresh figs.
- Whisk MASTERFOODS Balsamic Vinaigrette and olive oil together and drizzle over salad.
