Masterfoods Uncle Ben's Kan Tong DOLMIO

Italian Lamb and Fig Salad

Preparation time - 10 minutes
Cooking time - 8 minutes
Serves - 12

Ingredients

Lamb fillets (1.5kg) 5 MASTERFOODS Mediterranean Rub ½ cup Olive oil for drizzling over meat 3 tablespoons Asparagus, trimmed 4 bunches Bocconcini, drained 500g Walnuts, lightly toasted 150g Rocket leaves 6 cups Fresh figs 18-20 MASTERFOODS Balsamic Vinaigrette 1/3 cup Extra virgin olive oil for drizzling over salad 1/4 cup

Method

  1. Combine lamb and MASTERFOODS Mediterranean Rub in a medium bowl and coat until lamb is covered. Drizzle with olive oil.
  2. Heat BBQ plate or char grill. Sear lamb until tender. Remove, cover and let stand for several minutes.
  3. Place asparagus on grill. Char grill for 3-4 minutes until tender. Remove and slice on an angle 4cm long.
  4. Slice lamb into pieces (on an angle) about 2.5cm thick.
  5. Combine lamb, asparagus, bocconcini and nuts with the rocket. Toss lightly.
  6. Arrange salad with fresh figs.
  7. Whisk MASTERFOODS Balsamic Vinaigrette and olive oil together and drizzle over salad.
