Cajun Tuna Salad

Preparation time - 15 minutes
Cooking time - 10 minutes
Serves - 12

Ingredients

Extra Virgin Olive Oil 1 cup Sweet Potato, peeled & diced 2.5cm 1.2kg Butternut Pumpkin, peeled & diced 2.5cm 1.2kg Pine nuts 1 cup English Spinach, medium leaves 500g Tuna Steaks 1.2kg MASTERFOODS Cajun Seasoning ¼ cup MASTERFOODS Italian Dressing 3/4 cup MASTERFOODS Salt & Pepper to taste

Method

  1. Heat half the oil in a large non-stick frying pan. Add Sweet Potato and cook stirring for 8 minutes or until tender, remove.
  2. Repeat the process with pumpkin.
  3. Remove and place on paper towel, season with salt and pepper to taste.
  4. Using the heat from the pan, brown pine nuts until golden.
  5. Season Tuna Steak with MASTERFOODS Cajun Seasoning.
  6. Heat pan over a high heat, sear tuna on both sides for 1-2 minutes, remove and allow to stand.
  7. Toss prepared Sweet Potato and Pumpkin with Spinach leaves, scatter with pine nuts.
  8. Slice or flake with prepared tuna.
  9. Dress salad with MASTERFOODS Italian Dressing and season with MASTERFOODS Salt and Pepper to taste.

Tip: Serve with crusty bread.
