Thai Pumpkin Soup

Preparation time - 15 minutes
Cooking time - 30 minutes
Serves - 12

Ingredients

Butternut pumpkin, peeled, seeded and diced 3kg Spanish onions, peeled and chopped 6 MASTERFOODS Freshly Chopped Garlic 2 tablespoons MASTERFOODS Mexican Chilli Powder 1 tablespoon MASTERFOODS Thai Seasoning 1/3 cup Chicken Stock, diluted 6 litres Fresh coriander, chopped 1/3 cup Roasted cashews, chopped ½ cup Desiccated coconut 1/3 cup Sour cream to serve

Method

  1. Combine pumpkin, onion, MASTERFOODS Freshly Chopped Garlic, MASTERFOODS Mexican Chilli Powder and MASTERFOODS Thai Seasoning into large soup pot. Cover with stock, bring to the boil, then reduce to simmer.
  2. Simmer for 15-20 minutes or until vegetables have softened. Then remove and blend or process until smooth.
  3. Combine coriander, nuts and coconut and mix well.
  4. Spoon combined ingredients on top of soup with small spoon of sour cream.

Tip: Serve with some hot crusty bread.
